Happy St. Patty's Day!

I have been on a rainbow kick lately, so decided to make some "rainbow" cupcakes for St. Patrick's Day. I had seen this recipe several years ago in a Family Fun magazine and was just reminded of it again this year. What a great recipe for tomorrow!

It is so easy, just prepare white cake batter and then separate into six individual bowls. Dye each bowl of batter a color of the rainbow. Than pour a spoonful of each color into sprayed or lined cupcake tins. Frost as desired. I used yellow/gold frosting and the the kids decorated them with green sprinkles.

I was a little worried it after baking, the rainbow would be more of a pastel rainbow, but the colors stayed so vibrant and bright. It almost looks like a tie dye shirt.
Here are the number of drops of food coloring I used for each color;
Purple- 9 red and 6 blue drops
Blue- 12 drops
Green- 12 drops
Yellow- 12 drops
Orange- 12 yellow and 4 red drops
Red- 18 drops
I think the kids would agree that is was pretty tasty too!

Those look really yummy! I think maybe we'll do that for Lilly's b-day this year. She could have a rainbow b-day and we could all tie-die shirts at momo's when everyone's here....what do you think??

So were you still able to get 24 cupcakes when you divided out the colors?

I was only able to get 12 cupcakes. It was a little difficult making sure I divided them equally and I ended up filling the cups up a little too high. Next time, I might be able to get 18 cupcakes.

I'm sure the kids didn't mind if they were a little bigger than normal! more sugar!! :)
